FLEMINGTON, N.J. (Hunterdon County) — The historic Union Hotel in downtown Flemington has officially reopened its doors on Tuesday after 11 years, following an extensive redevelopment that transformed the landmark property into a 100-room boutique hotel, dining and entertainment destination.
The Union Hotel, located at 74 Main St., was originally established in 1814. It reopened as a Tribute Portfolio Hotel with 100 guest rooms, including 10 suites, along with new dining concepts, nightlife experiences, gathering spaces and pet-friendly accommodations. The hotel is part of the Courthouse Square development.
Developer Jack Cust led the redevelopment, which focused on preserving the historic character of the property while introducing modern hotel, dining and entertainment amenities.
“Throughout the redevelopment process, great care was taken to preserve and restore as many original architectural elements and historic details of the property as possible,” said Cust. “The project intentionally blends the preserved bones and historic integrity of the building with contemporary design, allowing The Union Hotel to maintain its rich sense of history while introducing a refreshed guest experience built for today’s traveler.”
The hotel is operated by Concord Hospitality and is part of Marriott’s Tribute Portfolio and Marriott Bonvoy program.

Executive Chef Andrew Lattanzio is leading the property’s culinary program, which includes Jersey Prime, a modern Italian steakhouse featuring steaks dry-aged in-house, house-made pastas, seafood, a raw bar, cocktails and a wine program.
The restaurant’s menu will also feature sides and seasonal ingredients sourced from Hunterdon County farms committed to sustainable and organic growing practices.

The hotel also features JP’s Cocktail Parlour, an intimate space offering cocktails, music and a late-night experience.
Another dining and entertainment concept, FIELDHOUSE SOCIAL, is scheduled to open later this year at Courthouse Square. The sports bar will feature duckpin bowling, golf simulators, interactive darts, shuffleboard, large-format game viewing, self-service beer and wine walls, cocktails and food.
The Union Hotel also includes event and meeting spaces for weddings, rehearsal dinners, corporate retreats, networking events and private celebrations. The property has multiple flexible event spaces and two breakout rooms and can accommodate events of up to 140 guests.
