HACKETTSTOWN, N.J. (Warren County) — As the Super Bowl approaches, Marley’s Gotham Grill at 169 Main Street in Hackettstown is bracing for one of its busiest food events of the year, with tens of thousands of chicken wings expected to move through the kitchen.
The restaurant anticipates selling about 26,000 bone-in and boneless wings — roughly 4,000 pounds — coated in an estimated 8 to 13 gallons of sauce. Customers can order full or half combo platters for game-day gatherings.
“We already started taking orders and we will stop taking orders at 6:00 p.m. on Saturday,” Chef Bruno Pascale said. “Sunday call at your own risk and we will try to accommodate you.”
Marley’s is known for its expansive wing menu, offering 402 flavors. The restaurant’s top three wing flavors are garlic parmesan, bang bang and honey barbecue.
In addition to wings, Marley’s menu features burgers and lighter fare. Popular options include the Gotham Burger, topped with American cheese, diced onion, mayo, ketchup and mustard on a brioche bun, and the Jalapeño Onion Smash Burger with caramelized onions, jalapeños and the restaurant’s signature sauce. Lighter choices include the Orange Pecan Salad, made with mixed greens, feta cheese, quinoa, candied pecans, grapes and mandarin oranges in an orange juice dressing.
Chef Pascale’s rise in the culinary world is detailed in his recently released memoir, The King of Wings: An Italian-American Chef’s Journey to Culinary Fame. Subtitled A Memoir of Flavor, Hustle, and 400 Wings That Changed Everything, the book traces his path from a small-town kitchen to building one of the country’s most talked-about wing destinations. The memoir includes behind-the-scenes stories, personal reflections and popular Marley’s wing recipes.
Marley’s also operates two food trucks — Marley’s Wings & Things and Marley’s Cravin’ Cuban — which are available for events and private bookings.
