From kitchen to king of wings: Warren County chef releases memoir

HACKETTSTOWN, N.J. (Warren County) — Warren County chef Bruno Pascale has released a new memoir detailing his journey from humble beginnings to building a culinary brand known for bold flavors and creativity.

Pascale, the chef at Marley’s Gotham Grill in Hackettstown, chronicles his rise in The King of Wings: An Italian American Chef’s Journey to Culinary Fame. The book highlights his path from working in a small-town kitchen to creating more than 400 unique wing flavors and establishing Marley’s as the foundation of his success.

The memoir blends personal storytelling with professional insight, capturing the determination, creativity and perseverance that shaped Pascale’s career. Through vivid storytelling, he recounts the challenges and triumphs of building a reputation in the competitive food industry, along with the experimentation and risk-taking that defined his signature style.

The book also explores Pascale’s life beyond the kitchen, including the personal sacrifices and lessons learned along the way. His story reflects both the highs and lows of entrepreneurship, emphasizing resilience and the drive to overcome setbacks.

In addition to sharing his journey, Pascale includes some of his most popular recipes, giving readers the opportunity to bring his signature flavors into their own kitchens. The memoir is aimed at a wide audience, including food enthusiasts, aspiring chefs and entrepreneurs.
